My friend Rebekah makes mozzarella with the instructor Rusty at
Quiet Creek Herb Farm's Cheese making class today. The class was organized by
PASA. The reference and recipe book we referred to was
Home Cheesemaking by Rickie Carrol. She runs an amazing cheese-making-necessity emporium called
New England Cheesemaking Supply in South Deerfield Massachusetts where one can order any number of molds, cultures, and cheese press plans.
